Gaither Ballou's Sherry Parfait

Gaither Ballou lived to be over 100 years old so maybe this dish contributed to her long life. Be sure to use salmonella free eggs in preparing this dessert. This is another Oxford, NC recipe. The pecans insure that this is a Southern dessert.
Ingredients:
1/2 lb vanilla wafer, crushed
1/2 cup butter, softened
1/2 lb powdered sugar, sifted
3/4 cup pecans
3 eggs, separated
3/4 cup sweet sherry
Directions:
1. Cream together the butter and the sugar. Beat the egg yolks and add them to the creamed mixture. Best the egg whites stiff and fold them into the mixture with care. Carefully blend in the nuts and then the sherry. Butter baking dish and line it with the Vanilla water crumbs, saving some of the crumbs for use later as a topping. Spread the filling mixture over the crumbs and sprinkle the reserved crumbs over the top. Cover the dish with plastic wrap and let stand in your refrigerator overnight. Serve with whipped cream.
