G. G.'s Fried Balogna With Gravy

This recipe was goes back to WWII when you could get balogna ends from your local grocer for pennies. .
Ingredients:
1 medium onion, diced
1 garlic clove, diced (optional)
2 tablespoons butter or 2 tablespoons oil
1 lb of good bologna, diced
1/4 cup ketchup
2 cups water
1/4 cup ketchup
1 tablespoon cornstarch
Directions:
1. Cook onion and garlic in butter or oil in large frying pan until transparent. Add bologna and brown lightly. Add ketchup and water. Cover and cook 15-20 minutes. Mix 1/4 cup cold water with 1 T. cornstarch and use this to thicken your sauce. Serve this over mashed potatoes, rice or bread.
