Furnace-Baked Meat Loaf

Furnace baking became popular during the Depression as a way of saving the cost of cooking fuel. It was very useful for cooking meats, casseroles & baked beans which needed longer cooking times. The directions would read: Place on a ledge just inside the furnace door with an average furnace fire. From: COUNTRY magazine
Ingredients:
1 lb ground beef (85/15 or 80/20)
1/2 lb ground pork
1 cup rolled oats (oatmeal)
1 cup onion, chopped
1/2 cup celery
1 large egg
1/4 cup ketchup
1 teaspoon salt
1 teaspoon poultry seasoning
1/2 black pepper
1 cup tomato juice
Directions:
1. Preheat oven to 350°.
2. Lightly grease or spray a 9 X 5 loaf pan.
3. In a large bowl, combine all ingredients, except the tomao juice.
4. Firmly pack into the loaf pan.
5. Pour tomato juice on top.
6. Cover tighlty with aluminum foil.
7. Bake for 1 hour or until cooked through.
8. Remove from pan & let set for 5-10 minutes before serving.
9. Slice as desired.
10. Serve with Mashed Potatoes With Carrots.
