My mother-in-law brought the recipe for this salad when they came to visit us from California one summer. I was really surprised, because she does not cook! But then again, she is dad's cheif salad maker! Add a cooked, chopped chicken breast and you have an entire meal.
Ingredients:
salad
1 head of cabbage, chopped (knappa cabbage is very good too.)
8 green onions, chopped w/greens
1/2 c. toasted sesame seeds
1/2 c. slivered almonds, toasted
2 pkgs ramen noodles, uncooked, crushed
2 small cans mandrin oranges, drained
dressing
1/4 c sugar
1 tsp cracked pepper
1 c salad oil (add a dash of sesame oil)
3 tbs soy sauce
6 tbs vinegar (or use the mandrin orange juice for a sweeter taste)
Directions:
1. Mix dressing ingredients in a large measuring cup
2. drain mandrin oranges
3. Toast almonds and sesame seeds, let cool
4. Crush noodles
5. Mix green onions, cabbage, crushed noodles, almonds and sesame seeds
6. Pour dressing over salad, toss and then gently toss in mandrin oranges.
