This is a yummy recipe, very simple and they turn out looking great (for those of you, like me, whose baking rarely ends up looking picture perfect). Kids and adults will love them!
Ingredients:

1/2 c. butter or margarine, softened
1/2 c. creamy peanut butter
1/2 c. sugar
1/2 c. packed light brown sugar
1 egg
1/2 tsp. vanilla extract
1 1/4 c. all-purpose flour
3/4 tsp. baking soda
1/2 tsp. salt

1 c. (6 ounces) milk chocolate chips
1 c. (6 ounces) semi-sweet chocolate chips
1 14-ounce can sweetened condensed milk
1 tsp. vanilla extract
chopped nuts or peanut butter chips, or any topping you choose
Directions:
1. To make cookies
2. In a mixing bowl, cream butter, peanut butter, and sugars; add egg and vanilla.
3. Stir together flour, baking soda and salt; add to creamed
4. mixture, mix well.
5. Chill. Shape into 48 balls, 1 inch each. Place in lightly greased mini-muffin tins.
6. Bake at 325 degrees for 14-16 minutes or until lightly browned. Remove from oven and immediately make wells in the center of each by lightly pressing with a melon baller (or similar instrument). Cool in pans for 5 minutes, and then carefully remove to wire racks.
7. To fill
8. Melt chocolate chips in a double boiler over simmering water.
9. Stir in condensed milk and vanilla; mix well.
10. Using a small pitcher or
11. pastry bag, (I find a measuring tablespoon works great) fill each shell with filling. Sprinkle with peanuts (or topping choice). Makes 4 dozen.
