These chocolate fudge cookies are stuffed with chocolate chips, nuts and raisins. What you end up with is a chewy cookie with a rich chocolate flavor. The raisins add to the chew and the nuts give this cookie a nice crisp bite. Read more . You can make it a gluten-free cookie by following the recipe or add flour! The choice is yours. Enjoy!
Ingredients:
3/4 cups of semi-sweet chocolate chips
1/2 stick of butter at room temperature
1 egg
1 tsp. vanilla extract
1/3 cup of white sugar
1/2 cup of almond flour
1/2 tsp. baking powder
2 tb unsweetened cocoa powder
a pinch salt
1/3 cup walnuts, chopped or pieces
1/2 cup semi-sweet chocolate chips
1/2 cup raisins (i use golden raisins.)
you can buy almond flour which is just powdered almonds at any high quality market or health food store. it adds a chewiness to any cookie, brownie or cake recipe. (i use bob's red mill almond flour.) *you can also substitute 1/2 cup of regular flour if you don't want a gluten-free cookie.
*you can substitute dried cranberries for the raisins and change the walnuts to pecans.
Directions:
1. Melt butter and 1/2 c. chips in microwave for 1 1/2 minute.
2. Stir well until smooth.
3. In medium bowl whisk egg, extract, and sugar until well-combined.
4. Stir in the melted chocolate mixture.
5. In a separate bowl combine the almond flour, baking powder and salt.
6. Mix in with chocolate mixture until barely mixed. .
7. Mix in the remaining 1/2 c. chips, nuts, and raisins.
8. Cover and chill for one hour.
9. Place by tablespoonfuls on greased cookie sheets, then press down each cookie lightly with the back of a spoon.
10. Bake at 325 degrees for 13-15 minutes.
11. Remove from oven when slightly puffy.
12. The cookies will firm up while they cool.
