Ingredients:
2 cups frozen corn
2 (16 ounce) cans black beans, drained and rinsed
1 large jalapeno, remove seeds and finely dice
1/2 red onion, finely diced
2 tablespoons fresh cilantro, coarsely chopped
2 limes, juice of
salt and pepper
Directions:
1. Combine all ingredients, mix well.
2. Let sit 20 minutes. Tastes better the next day!
