Ingredients:
1 cup chopped fresh pineapple
1 cup chopped peeled mango
2/3 cup chopped sweet red pepper
1 medium tomato, seeded and chopped
1/3 cup chopped seeded peeled cucumber
1/4 cup minced fresh cilantro
2 tablespoons chopped seeded jalapeno pepper
2 tablespoons lime juice
6 halibut steaks (8 ounces each)
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
Directions:
1. In a small bowl, combine the first eight ingredients; chill until serving.
2. Brush halibut with oil; sprinkle with salt and pepper. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Grill halibut, covered, over high heat or broil 3-4 in. from the heat for 3-5 minutes on each side or until fish flakes easily with a fork. Serve with salsa. Yield: 6 servings.
