Delicious! I made it with 100g of almonds and 50g of dry fruits what end up less sweet, perfect for the kids - and the adults! You can use any combination of chopped dried fruit, seeds and nuts, just be aware that with more seeds or nuts it is less sweet. Read more . With 100g of nuts and seeds is not sweet enough. I like it just because it is not good for my little one to eat to much sweets. It is also light! You just needs work with light ingredients.
Ingredients:
50g ready to eat dried prunes, chopped
50g ready to eat dried apricots, chopped
50g raisins or sultanas
175g porridge oats
50g butter
3 tablespoons syrup or clear honey
1 egg, beaten
Directions:
1. Preheat the oven to gas mark 4 /180C/Fan oven 170C
2. Lightly grease a small shallow (approx 9 x 7 inch, 22 x 18cm ) baking tin
3. Chop the prunes and apricots into small pieces
4. Put the prunes, apricots, raisins or sultanas and oats into a mixing bowl and stir until evenly mixed.
5. In a small saucepan melt the butter with the syrup / honey, and then add to the fruit and oats, and mix well.
6. Beat the egg, and when the fruit & oat mixture has cooled slightly, add this to the mixture.
7. Turn the mixture into the greased tin and level the surface
8. Bake for 15-20 mins until a pale golden brown
9. Leave in the tin until almost cold and then score into fingers with a sharp knife, and loosen around the edges
10. Remove from the tin to finish cooling on a wire rack. Can be stored in an airtight container for up to a week.
11. Suitable for freezing.
12. Variation: Use any combination of chopped dried fruit.
