A refreshing couscous salad that has dried raisins, cranberries and apricots.
Ingredients:
1 cup couscous
1 1/2 cups orange juice or 1 1/2 cups tropical juice
2/3 cup slived almonds
1/2 cup dried raisins
1/2 cup dried cranberries
1/4 cup dried apricot
1/2 teaspoon cumin
3 scallions, chopped
salt, to taste
pepper, to taste
Directions:
1. Prepare couscous according to package, but use juice instead of water.
2. fluff couscous with a fork.
3. Add all ingredients and toss until well mixed.
4. Refrigerate until chilled.
