Fruity Bran Flax Muffins

Whole wheat muffins with bananas, two kinds of bran and ground flax seeds.
Ingredients:
1/4 cup ground flax seed
1 cup whole wheat flour
1/2 cup bran flakes
2 tsp baking powder
1 tbsp vegetable oil
1/4 cup honey
1 whole egg, beaten
2/3 cup skim milk
1/2 cup unsweetened applesauce
1/2 tsp vanilla extract
2 medium bananas, ripe and mashed
Directions:
1. Heat the oven to 350 degrees F. Grease muffin tins.
2. Stir together the dry ingredients and set aside. In a bowl, combine the oil and honey. Whisk in the egg, milk, applesauce and vanilla.
3. Combine the dry and wet ingredients until just blended. Gently fold the bananas into the batter.
4. Spoon the batter into the muffin tins. Bake until the muffins just begin to brown, about 20 to 30 minutes.
5. Serve warm.
