be careful not to overbake. test after 30 minutes to keep this from happening. a different type of pan can be used depending on the occasion.
Ingredients:
1 cup packed brown sugar
2 cups dried fruit
2 cups water
1/2 cup applesauce
3/4 cup brewed coffee
3 cups flour
2 teaspoons baking soda
1 teaspoon salt
4 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground cloves
Directions:
1. preheat oven to 350 degrees. grease and flour a 9x13 inch pan.
2. in a saucepan, mix brown sugar, water, dried fruit, applesauce, and coffee. bring to a boil and boil for 3 minutes. remove from heat and let cool.
3. in a large bowl, combine flour, baking soda, salt, and spices.
4. when dried fruit mixture is cool, add to dry ingredients and mix well to combine.
5. pour into prepared cake pan and bake for 30 to 40 minutes.
