Fruit Upside-down Pudding

Ingredients:

  • 2 cups brown sugar
  • 4 eggs
  • 3 tbsp. hot water
  • 1 cup flour
  • 1/2 tsp. vanilla
  • 3 tbsp. butter

Directions:

  1. Combine 1 cup brown sugar and eggs. Beat well.
  2. Add water and beat again.
  3. Add flour, baking powder, and vanilla and mix well.
  4. Combine remaining brown sugar and butter in heavy saucepan.
  5. Heat until sugar is melted.
  6. Pour caramel mixture into bottom of a 9 x9 cake pan.
  7. Add fruit.
  8. Spread batter over fruit.
  9. Bake at 350 degrees for 30 minutes.
  10. Remove from oven and immediately turn pan upside down onto a sreving platter.
  11. Serve warm with milk
  12. Makes 8 servings
