So easy and simpleā€¦The melted chocolate in the bottom of the crust is made to avoid the crust of becoming soggy and the taste is really incredible. Can also use white chocolate instead.
Ingredients:
crust
1 cup butter, softened
1 cup + 2 tbsp castor sugar
3 eggs
4 1/2 cups flour
method
cream butter and sugar together until smooth. add eggs one at a time followed by flour. roll the dough into balls and wrap in a cling wrap. leave to chill in the refrigerator for 2 hours before rolling enough quantity to fit in a 20cm tart pan. make holes with a fork all around the dough and bake for 30 minutes until golden. cool.
filling
4 oz plain chocolate, melted
3/4 cup heavy cream
4 tbsp powder sugar
1/2 tsp vanilla
1/2 red grapes, halved
4 kiwi, sliced
apricot jam for glaze
Directions:
1. Brush the cooled crust with the melted chocolate and set aside until set. Whip the heavy cream, powder sugar and vanilla together until stiff peaks form. Spread over the set chocolate and use the fruits for decorating the surface.
2. Heat the jam with a little water and use to brush the fruits. Chill until serving.
