This salad contains several different fruits and is therefore very high in vitamins, especially Vitamin C. It's also very low in fat, which makes it a great recipe for a low-fat diet. Since this salad is very sweet, it could also be served as a desert. However, this salad contains a lot of sugar, and is not a good meal for a low-carb diet or diabetics, even though all the sugars are fruit sugars.
Ingredients:
20 ounces of pineapple chunks, juice reserved
2 apples, peeled and cored
20 ounces of peaches
2 bananas, peeled and diced
3 kiwis
1 pint strawberries
Directions:
1. Let the chopped apples sit in the pineapple juice for 5 to 10 minutes.
2. In a large salad bowl, combine the peach pie filling and pineapple chunks.
3. Remove apples from pineapple juice and add to the salad bowl.
4. Now let the chopped bananas sit in the pineapple juice for 5 to 10 minutes.
5. Peel and slice kiwi and 1/2 of strawberries. Chop the other 1/2 of strawberries and set aside.
6. Remove bananas from pineapple juice and add them to the salad bowl. Also add the chopped strawberries and mix everything.
7. Arrange kiwi slices around the edge of the serving bowl and alternate with strawberry slices.
8. Chill for 15 minutes before serving
