This is a beautiful salad. I serve with sliced toasted French bread
Ingredients:
dressing
6 tbsp walnut oil
3 tbsp raspberry vinegar
1 tsp salt
1/2 tsp grated lemon peel
1/4 tsp freshly ground pepper
pinch sugar
salad
8 radicchio leaves, torn
1 bunch arugula
1/4 honeydew sliced thin
1 orange,peeled, halved and sliced
3 strawberries,sliced thin
1 loaf french bread,sliced and toasted for croutes
Directions:
1. DRESSING
2. In a jar with tight-fitting lid combine all ingredients(can be made ahead. Cover and let stand at room temperature up to 2 days)
3. SALAD
4. Arrange radicchio and arugula on a platter. Arrange fruit on top. Drizzle with dressing just before serving. Serve with bread.
