Fruit Fridge Cake Squares - No Bake

Christmas time in South Africa is the hottest time of the year. These rich fruit cake type squares were a part of our cold Christmas buffet usually eaten around the family pool.
Ingredients:
1/2 cup margarine or 1/2 cup butter
1/2 cup brown sugar
1/4 cup citrus mixed candied peel
1/4 cup dried currant
1/2 cup golden raisin
1/2 cup dark raisin
1 teaspoon vanilla extract
1 large egg, beaten
200 g coconut cookies, broken into 1 inch pieces, peek frean's nice or tennis biscuits can be used
Directions:
1. Melt margarine.
2. Add sugar and mixed dried fruit.
3. Boil gently for 10 minutes on low heat, stirring it so that it doesn't burn.
4. Remove from heat and add vanilla extract and beaten egg, stirring all the while so egg doesn't curdle.
5. Gently fold in the broken cookies.
6. Press into a 9 x 9 square pan.
7. Refrigerate and cut into squares when completely cool.
8. Store in the fridge.
