Ingredients:
2 1/2 cups water
2 teaspoons ground ginger
4 slices lemon rind
2 tablespoons lemon juice
1/2 cup caster sugar
2 tablespoons honey
200 g dried pears
200 g dried apricots
200 g dried peaches
200 g dried apples
Directions:
1. Place everything but fruit in pot.
2. Stir over moderate heat till sugar dissolves.
3. Increase heat, bring to the boil;.
4. Strain and pour over dried fruit.
5. Cover and refrigerate.
