1. From 2 mangos,peeled and pitted and cut into 3 x1/2 sticks and 8oz. manchego cheese,cut into 3 x 1/4 stick,pair 1 piece of mango and 1 piece cheese together. From40z. sliced prosciutto wrap 1 slice around bundle. Repeat with remaining ingredients;arrange on platter.
2. Sprinkle 2 Tbs lime zest and 1/4tsp cayenne pepper over bundles. Drizzle with 2 Tbs lime juice.
