I like this frozen Waldorf Salad recipe because I freeze these in little stemmed plastic wine glasses and then I have them on hand for my lunches and for when we need a cute little side. My mother-in-law lives alone and I make up a couple of Zip-loc freezer bags of these for her so that she can pull one out of the freezer when she feels like it. Read more . When I'm making one for company, I freeze it in a round plastic container and then remove it and slice it into rounds to serve. It's a nice presentation either way.
Ingredients:
1/4 cup granulated sugar
1 tbsp. flour
1 egg (i don't usually put this in because i worry about raw egg)
1/2 cup pineapple juice
1/4 tsp. salt
2 apples, peeled and diced
1/2 cup celery finely chopped
1/2 cup chopped walnuts (i use pecans 'cause my mother-in-law doesn't like walnuts!)
1 cup whipping cream
Directions:
1. In small saucepan mix together sugar and flour. Add egg. Stir until moistenedj. Stir in pineapple juice and salt. Cook and stir over medium heat until it boils and thickens. Remove from heat. Cool. This step may be made faster by setting the saucepan in cold water. Stir often. Add apples, celery and nuts to cooled mixture. Whip cream until stiff. Fold into apple mixture. Pour into freezer molds, cups or tube. Cover to store.
