These are handy fruit salads that I freeze in disposable plastic wine glasses and store in Zip-loc baggies in the freezer. If you don't want to use the wine glasses, you can freeze them in foil muffin cups (not the paper ones! Read more !). You can pop a few out when you need a brunch side or light dessert and I take them to work for lunches. They are useful for every meal and very convenient. Great if you are dieting and the fruit you add is only limited by your imagination!
Ingredients:
2 cans (20 ounces each) crushed pineapple, undrained
2 packages (10 ounces each) frozen sweetened strawberries, thawed
1 can (20 ounces) fruit cocktail, undrained
1 can (12 ounces) frozen orange juice concentrate, thawed
1 can (6 ounces) frozen lemonade concentrate, thawed
6 medium firm bananas, cubed
these are the base ingredients, now add whatever fruit you want.
Directions:
1. In a large bowl, combine all ingredients. Pour into plastic wine glasses or foil muffin cups. Freeze until solid. When ready to serve, thaw for 30 to 45 minutes before serving.
