This is a fun light pie that is just as appropriate for a summer barbecue as a Christmas party! Cook time is freeze time.
Ingredients:
2 (20 ounce) cans crushed pineapple in juice
1 (8 ounce) package cream cheese
2 (10 ounce) jars maraschino cherries, without stems drained and halved
1 (10 ounce) bag miniature marshmallows, halved
1 (8 ounce) container whipped topping
2 (9 inch) chocolate cookie pie crust (the store bought cookie crumb kind)
Directions:
1. In a large bowl, beat pineapple and cream cheese at high speed until combined.
2. At low speed beat in cherries and marshmallows .
3. Slowly beat in whipped topping.
4. Divide the mixture between the two crusts; cover and freeze 24 hours.
