When it's hot outside, and you want a real chiller of a dessert, try this easy frozen concoction...it's quick and easy to put together, requires no baking, and all packaged foods. You can have a lot of fun being creative with the flavor, changing up the cream cheese flavor and/or the frozen juice concentrate flavor. Read more . Let me know what you try!
Ingredients:
1 cup oreo cookie crumbles (smash 'em up yourself, or buy the already crumbled cookies)
1/4 cup butter, melted
16 ounces pineapple flavored cream cheese
12 ounce frozen pineapple juice
16 ounce container cool whop
Directions:
1. Combine cookie crumbs and melted butter; press into bottom of foil-lined 9 inch square pan.
2. In a blender or food processor, combine cream cheese and frozen juice; blend on high speed until well mixed.
3. Pour mixture into a large bowl.
4. With a wire whisk, blend Cool Whip into the cream cheese/juice mixture.
5. Pour over cookie crust.
6. Cover and freeze several hours.
7. Let pan set out at room temperature for 10 to 15 minutes before you're ready to serve.
8. To cut, invert pan onto cutting board; remove foil from dessert and cut into squares.
9. Immediately freeze any unused portions, tightly wrapping them in foil.
10. There are SO MANY variations with this, but I've only used the pineapple myself. I'm determined to be more adventuresome this summer! How about using the frozen pina colada mix instead of the pineapple juice? Or raspberry cream cheese and frozen raspberry juice concentrate? Or fruit punch frozen concentrate? How about honey nut cream cheese with frozen orange juice concentrate? Or plain or any fruit flavored cream cheese with frozen lemonade or limeade concentrate? The new cheesecake flavored cream cheeses bring up another whole new dimension...so many possibilities! I love a recipe that you can create a new taste every time you make it!!
