Perfect for those summer meals when it is just too hot to cook a heavy meal. Served with toast points and tomato slices this rounds out a perfect summer meal. Hubby and I eat this often in the summer.
Ingredients:
11/2 c. diced cooked chicken (leftovers work great)
3/4 c. drained crushed pineapple
1/2 c. chopped pecans
1 c. heavy cream, whipped
1 c. mayonnaise
Directions:
1. Toss the chicken, pineapple, and nuts together.
2. In a seperate bowl fold the cream into the mayonnaise; add it to the chicken mixture, stir well and then place in the freezer for 2-3 hours or until firm.
