These are a family favorite for the holidays. I got this recipe when I was in school and have been making them for the last 20+ years. The recipe calls for green and red glace cherries, but I have only used red maraschino cherries. I don't know if it makes any difference in taste. Ingredients:
1/2 cup butter |
1 cup sugar |
1 egg |
1/2 teaspoon almond extract |
1 1/2 cups flour |
1/2 teaspoon salt |
1/2 teaspoon baking soda |
1/2 teaspoon baking powder |
2 cups rice chex, crushed to make 1 cup |
1/2 cup chopped green and red glace cherries |
Directions:
1. Preheat oven to 350 degrees. Cream butter and sugar together. Add egg and almond extract, mix well. In separate bowl sift flour, salt, baking soda, and baking powder. Add to cream mixture and mix well. Stir in chex crumbs and cherries. 2. Shape into 3/4 inch balls. Roll in sugar. Place 2 inches apart on baking sheet. Bake for 8-10 minutes or until bottoms are lightly browned. |
