I always buy too much eggnog at the holidays! Then I developed this recipe and eggnog doesn't last long at our house anymore. The cookies are soft, cake-like and fragrant. Don't skip the frosting; it really adds to the taste.
Ingredients:
3/4 cup white sugar
1/2 cup brown sugar
1/2 cup butter, softened (1 stick, either salted or unsalted)
1/4 cup unsweetened applesauce
3/4 cup eggnog (any type, even soy, will work fine)
1 teaspoon vanilla extract
1 egg
1/2 teaspoon ground nutmeg
1/4 teaspoon cinnamon
1/4 teaspoon salt (if unsalted butter was used)
1 teaspoon baking powder
2 1/4 cups all-purpose flour
2 tablespoons butter, softened
1/2 teaspoon vanilla extract
1 teaspoon rum (or rum extract)
1 cup powdered sugar
1 tablespoon milk
Directions:
1. Preheat oven to 350 degrees Fahrenheit.
2. Cream softened butter and sugars together until smooth. Add applesauce, mix.
3. Add eggnog, vanilla extract and egg. Mix until smooth.
4. Add spices, salt (if applicable) and baking powder. Mix.
5. Add flour and stir just until fully moistened (do not overmix or your cookies will be tough).
6. Drop by rounded tablespoonfuls onto ungreased cookie sheets.
7. Bake for 15-17 minutes until golden brown and slightly crackled in appearence.
8. Remove cookies from sheet within 2-3 minutes of removing sheet from oven. Allow cookies to cool before frosting.
9. Frosting: Cream together butter, vanilla extract, rum (or extract) until smooth. Add powdered sugar slowly and while mixing; texture will be crumbly. Add milk and stir until smooth. Using a knife or frosting spreader, apply 1-2 teaspoons of frosting to each cookie.
