Frosted Apple Bite Cookies

This recipe came from my mother about 20 years ago, but I just got around to making them myself tonight. It's apple season again, and I thought it was a good time to pull this one out of storage. The apple pieces keep these cookies nice and moist as they sit a day or two. Read more ...I froze the remaining cookies after that, as I didn't want them to dry out.
Ingredients:
cookies
1/4 cup butter, room temperature
1 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1/2 cup half-and-half
2 cups plus 2 tablespoons flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon (saigon cinnamon is excellent!)
1 good sized apple, peeled, cored, and finely diced
cinnamon glaze (or a good caramel frosting works well, too - just omit the cinnamon from the frosting in that case)
3 tablespoons melted butter
2 cups powdered sugar
1 teaspoon cinnamon (you know i like that saigon cinnamon!)
3 tablespoons (or more, as needed) half-and-half

Directions:
1. For the cookies, cream together butter and brown sugar in a large bowl.
2. Mix in egg, extract and half-and-half.
3. Add dry ingredients, folding in diced apples lastly.
4. Drop by spoonful onto lightly greased baking sheet.
5. Bake at 350 degrees for 10 minutes, just until cookies are lightly browned on the bottom.
6. Remove cookies from baking sheet and cool on waxed paper. When cool, frost with the Cinnamon Glaze.
7. To prepare the frosting, melt the butter in a medium bowl in the microwave.
8. Stir in powdered sugar, cinnamon and enough half-and-half to make it a nice spreading consistency.
9. NOTE: I know the instructions say to frost the cookies when completely cooled, but I like to spread the frosting while they are still just slightly warm, allowing the frosting to “glaze” onto the cookie and absorb into the cookie itself just a bit. You can try it, if you like, and see which way you prefer.
