From a great cooking class I took in Morton, Illinois.
Ingredients:
1 ounce red wine vinegar
1 ounce balsamic vinegar
1/2 teaspoon dry mustard
6 ounces canola oil
1/2 teaspoon fresh sage
1/2 teaspoon fresh basil
1/2 teaspoon fresh dill
1/2 teaspoon salt
1/2 teaspoon pepper
Directions:
1. Mince herbs. Measurements are approximate. Use appropriate amount to match your taste.
2. Combine vinegars and mustard.
3. Gently whisk in oil.
4. Add rest of ingredients and mix well.
