Radish salad.
Ingredients:
5 red radishes, trimmed and chopped
1 roma tomato, seeded and chopped
1 tablespoon mint, finely chopped
1 lime, juiced
salt (i do add more then less, radishes really zing when you add a bit of salt)
Directions:
1. Mix all ingredients together in a bowl and season with salt to taste (retaste prior to serving).
2. Chill in the refrigerator for about 30 minutes before serving, stir, and serve alongside some bread or corn-cakes.
