Yummy dessert that kids love.
Ingredients:
1 cup - pineapple juice (use juice from drained pineapple)
2 - eggs
1 tablespoon - flour
1/4 teaspoon - salt
1/2 cup - sugar
1 cup - enriched duvinci acini di pepe pasta (cooked with a few drops of green food coloring and blanched)
'*topping
1 can can of crushed pineapple (12 oz.)
1 can pineapple tidbits, drained
1 can mandarin oranges, drained
1 can mandarin oranges, with juice
1 8 oz. cool whip (lite)
1/2 bag miniature marshmallows (10.5 oz. size)
Directions:
1. Mix sugar, eggs, salt and flour in a saucepan until creamy. Add pineapple juice and cook until thickened. In a large bowl, pour the pudding over the green pasta and let set for eight to ten hours or overnight.
2. Add in the TOPPING ingredients and refrigerate three to four hours before serving. This will keep in the fridge at least two weeks.
