Frisee With Roasted Beet Pear And Blue Cheese

Another salad using some of my favourite flavours. Light and elegant and flavourful. I roast my own beets- it's super easy... just wrap them in foil, put them in an aluminum roasting pan and toss them in a 375 degree oven for about 45 min to and hour. Read more . Ingredients:
frisee lettuce
2 small roasted beets-cubed
1/2 firm ripe pear-sliced
shredded green apple-soaked in oj to keep from turning brown
blue cheese-crumbled
sherry vinegar
walnut oil
Directions:
1. Tear lettuce into fork size pieces
2. Dress with oil and vinegar to taste-toss to coat
3. Sprinkle with shredded apple and roasted beets
4. Arrange pear slices
5. Sprinkle w/ blue cheese to taste
6. Add fresh cracked pepper to taste
7. Couldn't be easier!
