Fried Tuna Fish Balls

This is a bit different,but sounds very good! I am sure they would be nice party appetizers. 8)
Ingredients:
2 (6 1/2 ounce) cans tuna
1/3 cup milk
1 tablespoon flour
1 beaten egg
1 teaspoon onion, minced
1/2 teaspoon salt
1/8 teaspoon pepper
1 dash cayenne
Directions:
1. Drain tuna; SAVE the oil!
2. Heat 1 TB of tuna oil in saucepan, mix in the flour, blend until smooth.
3. Remove from burner and add milk.
4. Continue stirring.
5. Add in onion, salt, pepper, and cayenne.
6. Place back on burner.
7. Stir constantly.
8. Cook mixture until smooth but thick.
9. Remove from heat add in egg and tuna fish.
10. Refrigerate until firm,then roll into 3/4 inch balls.
11. Roll tuna balls in flour.
12. Fry in deep fat (375°F),until nice and golden.
13. Drain on paper towels, insert toothpicks and serve!
