Fried Rice With Sausage and Lima Beans

A great way to use leftover rice.
Ingredients:
2 cups cooked rice
1 tablespoon butter
1 teaspoon canola oil
8 ounces fresh mushrooms
1 onion, chopped
1 cup lima beans, cooked
1/4 lb sausage (1 used 1 johnsonville pork sausage brat, hot flavor, casing removed)
2 eggs, lightly beaten
2 tablespoons soy sauce
1 teaspoon ponzu sauce
1 teaspoon poultry seasoning
1 teaspoon salt
1/2 teaspoon pepper
Directions:
1. Remove casing from sausage link. Crumble and saute in an iron skillet until no longer pink. Remove from skillet and set aside.
2. Saute onion in same skillet for 5 minutes. Add mushrooms, butter and oil, if needed. Saute an additional 10 minutes, until mushrooms are softened. Add salt and pepper to onion mixture.
3. To onion mixture, add cooked rice and poultry seasoning. Saute approx 5 minutes. Add soy and ponzu sauces. Stir.
4. To rice mixture, add cooked sausage and lima beans. Saute 1 minute.
5. Creat a well in the center of the skillet. Add beaten eggs. Cook until eggs are scrambled, approx 2-3 minutes. Incorporate eggs into the rice mixture.
6. Serves 4.
