Instead of calling out for Chinese food, stir-fry fresh shrimp, and serve with Fried Rice and Spring Rolls.
Ingredients:
vegetable cooking spray
1/2 teaspoon sesame oil
1/4 cup long-grain rice, uncooked
3/4 cup canned no-salt-added beef broth, undiluted
1/8 teaspoon salt
1 tablespoon chopped green onions
1 1/2 teaspoons chopped fresh parsley
1 teaspoon low-sodium soy sauce
Directions:
1. Coat a small nonstick skillet with cooking spray; add oil. Place over medium-high heat until hot. Add rice; saute 4 to 5 minutes or until rice is golden. Add beef broth and salt; bring to boil. Cover, reduce heat, and simmer 20 minutes. Remove from heat; stir in green onions, parsley, and soy sauce. Cover and let stand 5 minutes. Serve immediately.
