Fried Rice

Fried Rice without the MSG! Good way to use up leftover rice.
Ingredients:
1/2 medium onion diced
2 tablespoon coconut oil
3/4 cup chopped carrots
3/4 cup frozen peas
2 cups cooked brown rice
2 tbls soy sauce
salt and pepper to taste
additional coconut oil or other oil of your choice
2 pastured eggs- beaten
Directions:
1. Cook the onion in the coconut oil over low heat until just beginning to soften.
2. Add your veggies cook for a few minutes until crisp tender.
3. Add a little more oil if needed and then add rice.
4. Stir in soy sauce, salt and pepper.
5. Add more of your oil (I actually used chicken fat for my oil this time).
6. Let it crisp a little before stirring.
7. When it is heated through scoot the rice over to the side and pour in your eggs and scramble them.
8. Mix together and serve.
