This is a fried rice recipe I found on the back of a fried rice seasoning mix packet. It's really easy and delicious.
Ingredients:
(optional) 1/3 cup chopped, cooked meat - chicken, beef, pork, etc..)
sun-bird fried rice seasoning mix
2 tbsp oil
3 cups cooked, cold rice
3 onions
2 tsp soy sauce
2 eggs, beaten
1 cup frozen peas (or peas and carrots), cooked
Directions:
1. In a large skillet, heat oil.
2. Stir-fry rice and green onions
3. Add seasoning mix and soy-sauce. Stir-fry 1 minute.
4. Push rice to side, add eggs. Scramble well, then stir into rice.
5. Add peas and meat if desired.
6. (Optional) Cook on low for 2-3 minutes to heat up the meat and vegetables.
