Fried Potato Pancakes

This is great as an appetizer or appetizer. Sure to please all. Enjoy
Ingredients:
2 pounds potatoes peeled cooked and shredded
1 egg beaten
1 tablespoon minced onion
1 teaspoon salt
1/4 teaspoon pepper
3/4 cup all-purpose flour
Directions:
1. In a bowl combine potatoes, egg, onion, salt and pepper then stir in 3/4 cup flour.
2. Add enough remaining flour to form a firm dough.
3. Turn onto a lightly floured board and knead for 1 minute.
4. Shape into a 9 x 2 inch roll.
5. Cut into 1/3 inch slices and roll into 4 inch circles.
6. Fry pancakes in small amount of oil until browned about 4 minutes per side.
