Ever wonder what to do with those left over mashed potatoes? Well, I found this way of using them up pretty easy, and tasty.
Ingredients:
1 c. left over mashed potatoes
1 c. sifted self-rising flour
1 egg
1/4 c. buttermilk
salt and pepper to taste
1 small onion, finely diced
1 t. butter or margarine
Directions:
1. Saute' onion in butter until soft but not brown
2. Mix first 5 ingredients together and add saute'ed onion
3. Drop by tablespoonful onto a hot greased griddle
4. Smooth slightly with back of spoon
5. Cook for about 3 minutes each side.
6. makes about 15 mini cakes
