Fried Potato and Onion Patties

Makes a great side dish for any meal. To make it easier, use unseasoned prepared hash browns from the refrigerator section of your grocery. Cook time is approximate per batch.
Ingredients:
4 medium potatoes, peeled and shredded
1 small onion, minced fine
1 beaten egg
1 tablespoon flour
1 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon cayenne pepper
vegetable oil (for frying)
Directions:
1. Place potatoes between paper towels to squeeze out excess moisture.
2. Combine all ingredients except oil and mix well.
3. Heat 1/8 of oil in a large skillet and drop mixture 1/4 cup at a time into hot oil.
4. Press mixture into 3 rounds with the back of a spoon.
5. Fry until golden brown, turning once.
6. Drain on paper towels.
