Fried Plantains

This is one of my favorite dishes from my visits to Mandeville, Jamaica.
Ingredients:
4 ripe black plantains
1/4 cup vegetable oil
salt
lime wedge
Directions:
1. Peel the plantains and cut them in 1/2 on a bias, then slice in 1/2 lengthwise so you have 4 pieces.
2. Heat the oil in a large heavy skillet over medium heat.
3. Fry the plantains until golden on both sides, about 5 minutes per side.
4. Remove to a plate lined with paper towels and sprinkle with salt.
5. Serve with lime wedges.
