Fried Oysters a La Norfolk

Very simple and very delicious. From the Southern chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947.
Ingredients:
1 quart oyster
2 eggs, slightly beaten
cracker crumb (saltines)
oil or fat, for frying
Directions:
1. Preheat fat to 380°F.
2. Wash and drain oysters.
3. Beat eggs.
4. Dip oysters into cracker crumbs; dip into egg and again into crumbs.
5. Fry until golden brown and drain on absorbent paper.
