Around here, this southern delicacy is more popular than popcorn. I'll eat them with a burger instead of fries.
Ingredients:
1 pound sliced okra-fresh or frozen(thaw first)
2 eggs beaten
1 cup buttermilk
1 cup self-rising flour
1 cup cornmeal
2 teaspoons salt-or to taste
2 teaspoons black pepper-or to taste
2 teaspoons garlic powder-or to taste
1 teaspoon cayenne pepper-or to taste
oil- vegetable, corn, peanut, or canola
Directions:
1. Combine buttermilk and eggs in a medium sized mixing bowl.
2. Add sliced okra and let stand for 10 minute.
3. In a separate bowl, combine flour, cornmeal, salt, pepper, garlic, and cayenne. Mix well.
4. Using a large slotted spoon, dredge okra in small amounts until all are coated.
5. Pour about 2 inches of oil into a dutch oven or deep cast iron skillet. Heat oil to 350 degrees.
6. Add okra. Let fry for at least two minutes before agitating or breading will fall off.
7. Fry until golden brown. Drain on paper towels.
8. Season with additional salt if desired.
9. Serve hot with a dipping sauce or plain.
10. Suggestion:
11. Combine 1/2 cup ranch dressing and 1-2 teaspoons horseradish for a tasty dipping sauce with kick.
