Got the original idea from my friend, Donna, and added a few things to it.
Ingredients:
olive oil
margarine/butter
4 dashes hot sauce
1/2 c. flour
1/2 c. cornmeal
1/4 t. cayenne pepper
seasoned salt
4 - 6 med/large green tomaotes, sliced medium
1 yellow squash, sliced medium
1 zuchinni, sliced medium
1 med. white onion, rough chopped
1 tub fresh mushrooms, sliced thick
1 red pepper, rough chopped
2 t. chopped garlic
2 roma tomatoes, chopped (less water)
1 cup shredded parmesan
fresh ground black pepper
Directions:
1. Combine flour, cornmeal, cayenne pepper and seasoned salt
2. Add about 3 T. extra virgin olive oil to large skillet and add a pat of margarine
3. When heated, add onion and red pepper
4. While onion and pepper are sauteing, dredge zuchinni, squash, green tomatoes and mushrooms in flour mixture
5. Add to pan
6. Add Garlic
7. Add hot sauce
8. Fry until desired brown-ness, turning infrequently
9. Drain on paper-towel lined plate
10. Add chopped roma tomatoes and fresh grated parmesan cheese
