My Grandma Ross used to cook (WV) Fried Green Tomatoes and here sister in law, my Great Aunt Pearl fixed (WV) Fried Green Tomatoes and I was engaged to a lovely young lady in Mississippi once whose mom used to cook (MS) Fried Green Tomatoes. Read more . Funny thing is that these three dishes had just two things in common; tomatoes and a cast iron skillet. Truth be known, I like them all. My Great Aunt Pearl’s Chicken fried Green Tomatoes were pretty heavy and my least favorite so I’ll skip those. You know how to Chicken Fry anyway.
Ingredients:
grannies (wv) fried green tomatoes.
• 3 – 4 green (just before they start turning red) tomatoes, depending on size.
• enough fine corn meal for dredging
• 2 – 3 tbs cooking oil or butter
• one 12“– 15” cast iron skillet

• 1 egg + 1 tbs water whipped up good
• enough butter to do the job

Directions:
1. Grannies (WV) Fried Green Tomatoes
2. 1. Heat up your skillet and oil, hot but not smoking.
3. 2. Wash the tomatoes and slice 1/4 - 1/2 inch thick.
4. 3. Dredge the tomatoes in the corn meal and place in the skillet.
5. 4. Fry 2 or 3 minutes a side until just done
6. 5. Drain and serve.
7. P’s Mom’s (MS) Fried Green Tomatoes
8. 1. Heat the butter in your skillet just med., don’t burn the butter.
9. 2. Wash the tomatoes and slice 1/4 - 1/2 inch thick.
10. 3. Dip into the whipped egg and water and let drip well.
11. 4. Place in the skillet and cook 3 – 4 minutes per side. Don’t overcook.
12. 5. Drain and serve.
13. Use just enough butter to saute a batch of tomatoes and then add a bit more for the next batch. Do I need to say salt and fresh ground pepper to taste? Na.
