Fried Green Tomatoes

Fried green tomatoes are a southern favorite, I've been eating them for years and love the tangy flavor, different types of tomatoes offer a different flavor from very mild to very tangy. Around my family this is a mid summer favorite.
Ingredients:
1 medium tomato (green)
1 egg
2 tbsp flour
1/4 cup seasoned bread crumbs (4c)
2 tbsp olive oil
Directions:
1. Slice tomatoe into thin slices and dredge in flour. Scramble egg thouroughly then coat floured sliced. Coat slices in seasoned bread crumbs.
2. In a fry pan bring olive oil to 350 degrees over medium heat, oil is ready when bubble escape from a wooden spoon when place in oil. Place several slices in the oil frying both sides until golden brown. It may be necessary to use more oil than the recipe calls for to fry the tomato slices, the 2 TBSP of oil is what is getting absorbed by the breading.
3. Drain slices on paper towel, salt and pepper to taste.
