Fried Goat Cheese Sandwiches

I had this tucked away in my recipe box.
Ingredients:
1/4 lb goat cheese
1 teaspoon peppercorn, crushed
1 teaspoon fresh chives, chopped
8 slices french bread
4 tablespoons butter
2 tablespoons milk
4 tablespoons flour
2 large eggs, beaten
salt and pepper, to taste
1 cup tomato sauce
Directions:
1. Blend cheese, peppercorns and chives and set aside.
2. Butter 4 slices of the bread with 1 tablespoons of the butter.
3. Spread the cheese mixture evenly over the buttered slices and cover mixture with the remaining slices to make sandwiches.
4. Sprinkle both sides of the sandwiches with milk and dredge with flour.
5. Combine eggs and salt in mixing bowl and dip each sandwich into the eggs to coat each one completely. Set aside.
6. Heat remaining butter in a skillet, add the sandwiches and fry until golden brown on each side.
7. Serve hot with warmed tomato sauce on the side.
