Fried Goat Cheese Salad

Great for a light lunch with a fruity dessert.
Ingredients:
1 goat cheese log
4 egg whites
2 cups japanese bread crumbs (panko)
1/2 cup parsley
1/2 cup olive oil
mixed greens of your choice
Directions:
1. Mix bread crumbs and parsley and keep in separate bowl from egg whites.
2. Cut goat cheese into 1/2 inch discs. Coat all sides of the goat cheese discs into the egg white then in the bread crumb mixture. Place on plate and refrigerate for an hour to 8 hours.
3. When ready to fry. Heat oiled pan on medium high heat and fry till brown (3 min each side)
4. Serve atop mixed greens with your favorite dressing.
