Ingredients:
1 eggplant (sliced)
1 egg
1/4 cup flour
2 tablespoons olive oil
Directions:
1. slice eggplant and salt to get extra water out. leave salt on for about 20 minutes. blot with a paper towel.
2. in a small bowl, slightly beat egg. put the flour in a separate bowl.
3. dip the slices of eggplant first in the flour and then in the egg. (make sure to coat the slices well)
4. in a frying pan, heat olive oil on medium heat. fry slices of eggplant until lightly browned.
