These are knows as many things all over - Moose Ears, Beaver Tails or Indian Fry Bread. You can top these with almost anything. I have 3 favorite toppings - Sugar and Cinnamon - Marinara Sauce and Parmesan Cheese - Taco Meat, Tomatoes, Salsa, Lettuce and Onions. You can however get very creative with the toppings. Then thickness of the disk will determine the texture of the finished fried dough to some degree. Dough stretched thin will be puffy and crunchy where as thicker dough will give you a dense middle similar to a cake doughnut. Don't let that lead you to believe it is like a doughnut just similar density. I am not sure how many this makes as someone is always eating them when I am making them.
Ingredients:
1/2 cup warm water
2 1/4 ounces dry active yeast
1 pinch sugar
1 cup warm milk
1/4 cup sugar
2 teaspoons salt
2 eggs
1/3 cup oil
4 -5 cups flour
oil (for frying)
Directions:
1. In a large mixing bowl, stir together the yeast warm water and pinch of sugar. Let stand a couple of minutes to let yeast swell or dissolve. Stir in remaining sugar, milk, eggs, oil, salt and most of the flour to make a soft dough. Knead for 5-8 minutes by hand or with a dough hook. Add flour as needed to form a firm, smooth, elastic dough. Put in greased bowl. Cover loosely; let rise 30-40 minutes
2. Heat about 2 inches oil in a fryer - try to keep the oil at 350 degrees. Oil is ready when a small bit of dough sizzles and swells immediately.
3. Pinch off a golf ball sized piece of dough. Flatten with your hands and stretch into a disk about 6 inches across or roll out into an oval until it reaches your desired size. Fry one or two at a time until golden brown on both sides turning once. Drain on paper towels. Top with marinara sauce and grated parmesan cheese or sugar and cinnamon.
