Seasoned fried chicken with a rich gravy made from the pan drippings. This is how Gina describes this dish. She uses only 2 tablespoons of frying oil for her gravy.
Ingredients:
1/2 cup milk
1 egg, beaten
1 cup all-purpose flour
2 teaspoons garlic salt
1 teaspoon paprika
1 teaspoon ground black pepper
1/4 teaspoon poultry seasoning
1 (4 pound) whole chicken, cut into pieces
3 cups vegetable oil
1 cup chicken broth
1 cup milk
Directions:
1. In medium bowl beat together 1/2 cup milk and egg.
2. In a resealable plastic bag mix together the flour and spices.
3. Place chicken in bag, seal and shake to coat.
4. Dip chicken in milk and egg mixture, then once more in flour mixture.
5. Reserve remaining flour mixture.
6. In a large skillet heat the oil to 365 degrees F (185 degrees C).
7. Place coated chicken pieces in hot oil and brown on all sides.
8. Reduce heat to medium low.
9. Continue cooking chicken until tender, about 30 minutes.
10. Remove chicken from skillet and drain on paper towels.
11. Discard all but 2 tablespoons of the frying oil.
12. Over low heat stir in 2 tablespoons of reserved flour mixture.
13. Stirring constantly, cook about 2 minutes.
14. Whisk in chicken stock, scraping browned bits off bottom of skillet.
15. Stir in 1 cup milk.
16. Bring to a boil over high heat, stirring constantly.
17. Reduce heat to low and simmer for 5 minutes.
18. Serve immediately with the chicken.
